Ingredients
- 200 g whole wheat pasta
- 1 tbsp olive oil
- 1 cup mushrooms sliced
- ½ cup plain Greek yogurt
- 2 tbsp chopped fresh parsley
- salt and pepper to taste
Instructions
- Cook pasta according to package instructions; reserve 1/2 cup pasta water.
- Heat olive oil in a skillet, sauté mushrooms and garlic until tender.
- Remove skillet from heat and stir in yogurt.
- Add pasta and reserved water gradually, tossing to coat.
- Season with salt, pepper, and fresh parsley before serving.
Notes
Use any pasta shape you like, including gluten-free varieties. If you prefer a richer flavor, add a sprinkle of parmesan or nutritional yeast before serving. Avoid overheating the yogurt to prevent curdling — always stir it in off the heat.
